Another one of Tracey’s lovey recipes that some parents have requested!
CHILLI CON CARNE
Ingredients – serves 4 people
1 large white onion – finely diced
1 large red pepper – finely diced
3 garlic cloves – crushed
1 tbsp olive oil
1 tsp chilli powder (more if you like it hotter)
115g tomato puree
1 x 400g tin chopped tomatoes
1 x 400g tin baked beans (or red kidney beans for adults)
500g mince beef
Method
Fry onions, garlic and peppers in a pan with the olive oil until soft
Add chilli powder and cook for 2-3 minutes
Add the mince beef, keep stirring so the meat separates and does not stick together, when meat browned stir in the tomato puree
Add the chopped tomatoes, swill the tin with water and also add to the pan. Cook gently for 25 minutes
Add the beans and cook for another 25-30 minutes, stirring occasionally
Serve with rice and or tortilla chips
